A weekend away.....





 We spent the weekend with friends in South Portland. I now have "material" for several postings! So I should be right back! We had our "beach" cocktail party last weekend and I served this Baked Brie but it disappeared before I could get a picture. So I made it again for our friends this weekend.







 Baked Brie

3/4 cup apricot jam or preserves(not jelly)
1/4 cup honey

1/4 cup brown sugar

8-inch wheel of Brie, about 2 pounds
3/4 cup slivered almonds

Whisk the jam, honey and brown sugar together and set aside.

Cut off the top portion of the rind. Using a spoon, scoop out the center of the brie round to within 3/4 of an inch of the sides and bottom. Try to do this in one piece. Save this cheese. Spread half the jam mixture over the bottom. Replace the scooped-out cheese, and top with the remaining jam mixture. Sprinkle the almonds over the top. Cover loosely with foil and bake in a preheated 350° oven just until melted, about 30 minutes. Remove the foil for the last 5 minutes of baking. Serve with crackers, apple slices or a baguette.

Oh yum. I can tell that that would be delicious just reading the ingredients. Glad that you had some time off with friends. Always fun!

(Are you going to the fair? We plan to now as someone gave us tickets. Hmmmm...how can one refuse?)

This looks delicious Carol. My daughter made baked brie in pastry for an afternoon treat for us and it was wrapped in pastry and filled with pieces of concord grapes with grapes on the side. It was delicious! I'd love to try yours.

I love to eat baked cheese, usually we have Camembert but your Brie looks yummy too.
Like the added touch of slivered almonds.

Hi Carol, Your pictures makes me hungry and I just finished eating not that long ago. It looks so yummy. It is so good to get away for a few days. It is so relaxing.
