Soup, Sandwiches and Cookies.....

I hope everyone had a good weekend. We spent most of the time in the kitchen! The house is decorated, the Christmas music is organized and there is just a feeling of contentment. I am reminded of growing up in a small New Jersey town. This time of year there was lots of snow and we would go sledding - fearlessly I might add. In those days the street would be closed to all traffic but sledders.

We would only take a break for lunch. We were rosy cheeked and hungry and my mother would have lunch ready. More often than not there would be a bowl of tomato soup and a grilled cheese sandwich.

I am a huge fan of Ina Garten and her recipes. So that is what we made. You can find the recipe here. We doubled the recipe.

Mom never added basil! Or Creme Fraiche!

After this had cooked for the allotted time, the food mill came out and finished the job. We froze bags of this for future lunches. I don't know about you but I have been disappointed recently in many of the lunches we have in restaurants. This lunch was not a disappointment.

We reheated the soup in the top of a double boiler and then made the grilled cheese sandwiches with extra sharp cheddar.

Lunch was good. Then I made cookies.

You can print recipe here. A neighbor in Maine gave me this recipe years ago. It only makes 3 dozen so they usually all disappeared after school and before supper.

Have a wonderful week!

I always make these cookies but use Heather Rankin's recipe. The photo of your tomatoes reminds me of the wonderful tomatoes we picked in our friend's garden in Rome. Carol, i have to tell you, your photo of your family under the Christmas tree has stayed with me since I saw it. It reminded me so much of our Christmases, but after a couple of phone calls and a search through scrapbooks and albums by my sisters and I, it turns out that my family picture is only in my mind. Thanks for sharing your photo - it sparked a lot of memories and conversation!

Hmmm gingersnaps. What a wonderful picture you took for us of lunches enjoyed after sledding. I can almost smell the grilled cheese sandwiches and the tomato soup. I must try this recipe as tomato soup is a favorite around here. It would be nice to spruce it up some.

Hi Carol, your lunch is a staple here in our home although the soup would be canned and the cheese plain old cheddar. I make those cookies often - a big favorite! I hope you have a wonderful week. Blessings, Pamela

It all looks and sounds delicious. Ina Garten's recipes are wonderful. I grew up in a small town in New Jersey, too. We would go sledding in my grandmother's back yard because she had the most marvelous hill. It was great fun. Stop by The Pink Home if you get a chance and check out some of my new designs. :)

Hi Carol, Your post brought back a lot of wonderful memories of the coasting parties and mom having hot chocolate and cookies ready for all of us. We live close to town and had a great place to coast so the kids all came to our house. Your soup and sandwich looks so very yummy. Your Christmas Cactus in a previous post was beautiful. My mom could grown them and they would bloom all year. I didn't inherit her green thumb. Have a great week and enjoy the holidays. Your Missouri Friend.

My very most favorite lunch. I usually start with canned tomato soup with additions, but I think I might try to make it from scratch. Thanks for the recipe! Sounds like all is well at your house!

Now that's a gourmet twist on a classic American lunch! Hard to improve on, but the photos look like
you've achieved gourmet success! What time is lunch tomorrow?
