Tomato Soup for Supper

We decided to make Ina’s Cream of Tomato soup after listening to friends rave about how delicious it was. And it was! Jack did the prep work and then we cooked.

Cream of Fresh Tomato Soup
From Ina Garten’s Barefoot Contessa Back to Basics
3 tablespoons good olive oil
1 ½ cups chopped red onions
2 carrots, chopped (don’t peel)
1 tablespoon minced garlic (3 cloves)
4 pound vine ripe tomatoes, coarsely chopped (about 5)
1 ½ teaspoons sugar
1 tablespoon tomato paste
1/4 cup packed fresh basil plus extra julienned for garnish
3 cups chicken stock
1 tablespoon kosher salt
2 teaspoons freshly ground black pepper
3/4 cup heavy cream
Heat oil in a large, heavy bottomed pot over medium low heat. Add onions and carrots and sauté for about 10 minutes. Add the garlic and cook for another minute. Add the tomatoes, sugar, tomato paste, basil, chicken stock, salt and pepper and stir well. Bring the soup to a boil, lower the heat and simmer, uncovered, for 30 to 40 minutes until the tomatoes are very tender.
Add the cream to the soup and process it through a food mill into a bowl discarding the pulp. Reheat the soup over low heat just until hot. Garnish with julienned basil.

Carol, what a wonderful evening for tomato soup. You sure couldn't have picked a better evening as it's cold and windy here. I see you are using you new food mill. Beautiful pictures!

Who is Ina?
The soup and bread look scrumptious, can I come for supper please?

Great photographs, it makes me want to make the soup and bread, maybe another day! I haven't got a bread maker and am lazy and buy Covent Garden soup which is delicious and I go to a local bakery and buy the bread.

Have a great weekend Carol and Jack. ( I wish I could get Phil in the kitchen....maybe on second thoughts, he is better off out of it!?

Oh, gorgeous. I lovelovelove tomato soup. It's one of my favorite dinners. I've never made this one, though. I think I"ll have to remedy that situation very soon!
