Pink and Purple

 

Onions, that is…. Ina Garten’s Salad with roasted balsamic onions and blue cheese is a favorite and as I was sorting through pictures, I had an “aha” Pink Saturday moment as I saw these purple onions ready to go into the oven. The recipe is from Ina’s Barefoot Contessa Parties. I am joining Beverly at How Sweet the Sound for Pink Saturday and Michael Lee West Designs by Gollum for Foodie Friday. To roast the onions, preheat the oven to 375 degrees.

3 small red onions

1/4 cup plus 2 tablespoons good balsamic vinegar

1 cup good olive oil

1 1/2 teaspoons kosher salt

1 teaspoon freshly ground pepper

6 tablespoons minced shallots (2 large)

2 teaspoons Dijon mustard

1/4 cup good red wine vinegar

3/4 pound or a little more blue cheese (I bought some at Fresh Market already crumbled)

2 heads red-leaf, washed and spun dry and then torn (I used 2 bags of a spring mix)

Cut the onions in half and slice 1/4 inch thick. Place on a baking sheet and toss with 1/4 cup balsamic, 1/4 cup olive oil, 1 teaspoon salt and 1/2 teaspoon pepper. Bake for 12 to 15 minutes or until the onions are tender. Remove from the oven and toss with the 2 tablespoons of balsamic.Let cool to room temperature,

To make the dressing, whisk together the shallots, mustard, red wine vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. While whisking, add 3/4 cup olive oil and continue to whisk until dressing is emulsified. Mash 1/4 pound of the blue cheese and add to dressing.

When ready to serve, toss lettuce with enough dressing to taste. Place lettuce on plate and arrange the onions on top. Add more blue cheese. Salt and pepper if desired.

I had dressing and roasted onions leftover. The onions were wonderful on grilled hamburgers and the salad dressing did not last very long.

This sounds absolutely amazing! I think it could be wonderful for a light lunch or tweaked with chicken and roasted potatoes as a full dinner meal.

I'm going to run right out for some red onions! This recipe looks and sounds so good! I really can't wait to try it...HiHoney will love it, too! Thanks for sharing this salad. I've been trying to think of something other than tossed salad...this will hit the spot!

Carol this is my kind of a Pink Saturday! I love doing Pink foods! Sounds fantastic. I have never cooked my onions like that but I know we would all love them. Love the blue cheese addition too. I could just sit and eat blue cheese. Have a fabulous Pink Saturday.

Hi Carol, I think those onions must smell great when they are cooking but I am SOOO allergic to them. I still cook them for my family and just enjoy the aroma, although sometimes I need help cutting them to avoid exposure. Did you know that Lynn at Happier Than a Pig in Mud is having an Ina Garten recipe blog party on March 15th? This would be perfect. Linda

Hi Carol....I'm back to tell you about my scarf that you saw on SKW. It's a pattern that is a KnitALong with the Concho Valley Knitters Guild. One of the members put it together and presented a program at the last meeting. I've done the Feather and Fan before, but the other lace stitches are new for me. I'm really enjoying knitting on this as the pattern and yarn colors change often and 50 stitches across goes pretty fast. In other words it's a good project for my Short Attention Span...I've so many WIP's that need a Longer AttenSpan!

We will be back to Sweaters next Wednesday....hope to see you then!

It was SEW fun to meet you & get together for some serious shopping & lunching!

We had an uneventful drive home...just long & tiring. We were very happy to get home to our own little nest. Now to unpack & put it all away. Ugh!


This recipe is making my mouth water just reading it. I've copied it & I'm putting red onions on my grocery list right now. Thanks for sharing it with us & thanks for my darling mug mat & for all the time you were willing to spend with Donna & I while I was there in FL. You gals were the highlight of my trip, honest!
