Easy suppers that we can eat on the lanai are my favorite "good" thing. I have gotten so many ideas from all you bloggers out there. I thank you. We had ground beef, Rotel tomatoes, and flour tortillas but no taco seasoning. So I made it. Easy. No preservatives and I can control the salt. You can print the recipe here.
1 Tbsp. Chili Powder
1/4 tsp. Garlic Powder
1/4 tsp. Onion Powder
1/4 tsp. Crushed Red Pepper Flakes
1/4 tsp. Dried Oregano
1/2 tsp. Paprika
1 1/2 tsp. Ground Cumin
1 tsp. Sea Salt
1 tsp. Black Pepper
The above makes enough seasoning for 1 pound of ground beef. We saute onions and peppers and set aside. We cook ground beef and drain well. Add seasoning, 1/3 cup water, 1 can Rotel tomatoes, and onions and peppers. I serve with chopped lettuce and grated cheese on flour tortillas. Easy. The seasoning can be adjusted for personal tastes. There is enough for the two of us to have another meal.

One of my favorite meals!...yours is even healthier. And I would love to be able to say "We're having dinner on the Lanai" someday. It would mean we're living atleast part time in a warmer climate!
There was a time if I didn't have every ingredient for a dish, I wouldn't even try to improvise. Once I learned I could, many times, do even better than following the recipe, we were rewarded! Your dish sounds (and looks) wonderful. I can't wait for some outside dining. Alas, it is 35 degrees right now and raining.

I love using my own spices and herbs. What a delicious and easy supper. Its still too cold here to eat any of our meals outside on the deck. Lucky you!!

Are Rotel tomatoes a brand of tomato or a particular kind of tomato? I've never cooked with them so I hope I don't sound completely off my rocker.

This looks soooo good, Carol! I wish Rotel made an EXTREMELY MILD version of their spicy tomatoes. Even their mild is too hot for me...I'm a whimp, I guess. LOL

Oh, boy... this look delicious and so full of flavor. Eating outside is a very nice and relaxing thing to do. We did this evening with lots of little ones running around playing baseball.
