Chicken Pot Pie

I am a major fan of Ina Garten! I have all her books and I have preordered the new one How Easy is That coming out in late October.  I have a set of her books here and another one in Maine because it was getting too expensive shipping them back and forth. I also watch her cooking show whenever possible. I know if I use one of her recipes my efforts will be rewarded.

We went out to lunch and had chicken pot pie that was lacking in many areas and I remembered that one blogger had made Ina’s pot pie so I looked it up. You can find the recipe here.
I made a couple of minor changes. I use Better than Bouillon now to make my chicken stock if I don’t have homemade so I did not add the bouillon cubes. I also added a “glug” of dry sherry.

Because making crust is just not my thing any more, I used puff pastry instead of traditional pie crust.

The recipe made 6 pies in the Apilco bowls so we had leftovers which was wonderful. I will make this again.

Carol, this looks delicious! I love Ina Garten, too. Her recipes always work for me. I love how she cooks recipes from her various books on the show - sometimes I'll see her working on something and then see if I can find it in the book. It's like having a personal cooking coach right there.

Carol, they look delicious and I think even I could make them. I love the dishes you have used, I will have to look out for some of them, in the meantime I will make a large size one. I have never heard of Ina Garten, but if here recipes look that good and seem easy I will have to look her up on the web!!

Carol, Ina's one of our favorite as well as you know. I like the idea using the puff pastry when you are in a pinch and for the sherry this would give this recipe just the right twist.

I love Ina's lobster Pot pie too. Your recipe looks so good and I love the puff pastry. Love the flower and leaf design. Thanks for all the tips. It certainly is pot pie weather here. Cold and rainy.

Carol, that looks delicious. I think chicken pot pie is total comfort food. I very much enjoy watching The Barefoot Contessa but I don't have any of her cookbooks. Thank you for always leaving such kind comments on my blog. I really, really appreciate it!

I'm also a fan of Ina Garten. I saw her make both the chicken and lobster pot pies and have always wanted to try them. I'll have to go ahead and get some puff pastry now. Your bowls are so lovely; they're on my to own one day list.

You just made my day, I didn't realize Ina is coming out with a new book - late October, 2010!! I love Ina and all her recipes. Your pot pie looks so good--love your bowls.

I had no idea Ina was putting out a new book. Where did you pre order it? Her books are like bibles to me as I read them all the time. I am going to make her orzo/shrimp salad recipe for this holiday weekend. It serves tons and everyone likes it. Gosh I could go on and on about all her recipes. Now the pot pies look delicious and now I will be fixated on them all day:-)

Carol-Making crust was NEVER my thing:) My husband loves chicken pot pie and I love the individual ones. Love those bowls!
